For day 3 of my no cereal challenge we went with good ol’ oatmeal. Yes, I guess oatmeal could be considered cereal too by some, but this oatmeal doesn’t come from a box. I’m talking about steel cut oats with all kinds of yummy extras thrown in. Because steel cut oats take about 30-40 minutes to cook normally, again with a little advanced preparation you can cut that down to about 10 minutes, perfect for a weekday breakfast. Here’s the deal: For 2 servings of oatmeal, soak 1 cup of steel cut oats overnight in enough water to completely cover oats. In the morning, drain and rinse oats leaving them in a strainer. Fill a shallow pot with 1 cup of fresh water and bring to a boil over high heat. When water boils add oats and reduce heat to a simmer. Simmer oats for about five minutes stirring occasionally then add extras. I usually add a generous handful of raisins, about a 1/4 cup of chopped roasted almonds, 2 tablespoons ground flax-seed, and a few dashes of cinnamon. Stir and remove from heat, allow to sit covered for up to 5 minutes to allow raisins to plump. Divide between 2 bowls and add desired amount of milk and sweetener or just eat it as-is. This is a hearty, delicious, nutritious and quick breakfast. Can’t beat that.
