Among other things I have bread duty for Thanksgiving, so I came up with this super easy roll recipe for the bread machine so I can streamline all my Thanksgiving day baking. These are very versatile and tasty rolls. If you like, before baking mix 2 Tbsp non dairy milk and ½ tsp cornstarch brush the rolls and sprinkle some seeds on top.

2 cups white whole wheat flour

1-1/2 cups unbleached all purpose flour

1 cup plus 2 Tbsp non dairy milk

1 Tbsp ground flax seed

2 Tbsp sugar

4 Tbsp non dairy margarine (I use Earth Balance)

2-1/4 tsp dry active yeast

In a small saucepan over low heat combine milk, sugar, margarine and ground flax seed just until margarine has melted. Add this mixture to the bread machine pan. Add flours and put yeast on top. Set machine for the dough cycle. After the dough has been formed and risen for about an hour, remove the dough and knead it for about a minute on a floured surface. Form the dough into a ball and roll it out into a large circle, about 12 inches wide. Using a pizza cutter cut the round into 16 triangles (or you could do 12 if you want fewer, larger rolls).

Cover the dough as is and let it rest for about 30 minutes. Preheat your oven to 375 degrees and prepare a large baking sheet by lining it with parchment paper. After the 30 minutes just roll each dough piece starting from the wide end and place on the baking sheet. Once all the rolls have been rolled bake for about 15 minutes.

Some variations on this recipe:

Roll half a smart dog inside the dough for a pig in a blanket, lunch tomorrow; check!

Before rolling the dough, spread with melted margarine and sprinkle with cinnamon and sugar for cinnamon rolls, breakfast tomorrow; check!
