Thanksgiving is so last week now, it is seriously time to move on to Christmas! One of my all time favorite flavor combos is chocolate and peppermint, there is just something so wintery and cozy about it. So how about chocolate peppermint doughnuts? I used the Devil’s Food Doughnut recipe from Vegetarian Times and just used 1/2 tsp. peppermint extract and 1/2 tsp. vanilla extract instead of the 1 tsp. vanilla. When the doughnuts have cooled slightly but are still warm toss them gently in a mixture of 1/4 cup powdered sugar and 1/4 cup finely ground candy canes (about 2 regular sized ones), a food processor works great for this. If you don’t have a doughnut pan, a mini or regular sized muffin pan will work just fine.
