Ever wonder what a PB&J sandwich would taste like if it were a muffin? Well, wonder no more…

PB&J Oat Bran Muffins

2 cups oat bran

1 cup white whole wheat flour

1/2 cup brown sugar, packed

1 Tbsp. baking powder

1 tsp. cinnamon

1/2 tsp. salt

1 cup non-dairy milk (I use almond)

2 Tbsp. ground flax seed

1/3 cup applesauce

1/3 cup peanut butter

1/3 cup vegetable oil

1/3 cup jam of your choice

raw sugar for sprinkling (optional)

Combine oat bran, flour, brown sugar, baking powder, cinnamon and salt in a medium bowl and set aside. In a blender or food processor combine milk, flax seed, applesauce, peanut butter and oil letting it get really well combined (let it whirl for at least 30-45 seconds). Add the wet ingredients to the dry, mixing until just combined. Prepare a 12 cup muffin pan and fill each cup halfway, top each muffin with about a tsp. of jam and then add the remaining batter on top of the jam so it it hidden inside. Bake in a 425 degree oven for about 15 minutes. Remove muffins from pan and allow them to cool on a rack.
