Yup, just one single pancake is all you’re getting here. It’s a big one though. Topping options are limitless, how about sliced almond and chocolate chips… perhaps sliced bananas and chopped walnuts, or maybe blueberries and coconut? Mmmm…

A Big Pancake Just for You!

1/4 cup flour (any type will do, I used Bob’s Red Mill 10 grain flour)

1/2 tsp. sugar

1/2 tsp. baking powder

dash of salt

1 tsp. ground flax seed

1/2 tsp. vegetable oil

1/4 cup non dairy milk

1 Tbsp. non dairy yogurt

2 Tbsp. dried cranberries

2 Tbsp. chopped hazelnuts

Mix all ingredients in a small bowl except for cranberries and nuts. Pour your batter into a preheated, prepared skillet and then sprinkle cranberries and nuts (or whatever topping you choose, it is your pancake after all!) on top gently pressing them into the batter with the back of your spatula. Flip when nicely browned taking care not to cook the topping side to long to avoid burning. Enjoy with a smattering of Earth Balance and maple syrup, or not…
