Yum, chocolate cranberry oat bars. These lay somewhere between granola bars and cookies with a dash of brownie thrown in. Perfect for a snack, dessert or whatever (I just had one after my morning run and don’t feel an ounce of guilt about it!).

Chocolate Cranberry Oat Bars

2 Tbsp. chia seeds

6 Tbsp. water

dry ingredients:

2 cups oats

1/2 cup whole wheat pastry flour or white whole wheat

1 tsp. baking powder

4 Tbsp. cocoa powder

1/2 tsp. salt

1/3 cup Sucanat or brown sugar

1/2 cup chocolate chips

1/2 cup dried cranberries

wet ingredients:

1/3 cup maple syrup (or agave)

1/2 cup nut butter (I used almond)

1-4 Tbsp. non-dairy milk

Mix chia seeds and water in a small bowl, whisking vigorously then set aside. In a medium sized mixing bowl combine dry ingredients. In a small mixing bowl combine wet ingredients, except for the milk. Mix in chia seed mixture to the wet then add to the dry ingredients. Add a little milk, one Tbsp. at a time until mixture is just moist enough to hold together. Spread into a prepared 8×8 square pan and bake for 15-20 minutes at 375 degrees. Allow to cool slightly before cutting and removing bars.
