Banana bread isn’t a hard sell, you either like it or you don’t. This is a little different though in that it isn’t loaded with sugar and oil, which is a plus in my book. Lightly sweetened with a touch of brown sugar and dates and full of whole grain goodness, what’s not to love?

Banana Date Flax Bread

dry ingredients:

1/2 cup oat flour

1 cup spelt flour

1 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

wet ingredients:

1/3 cup flax meal

1/3 cup water

1/3 cup oil

1/3 cup brown sugar

1/3 cup non-dairy yogurt

10 dates, roughly chopped

2 bananas, sliced

In a medium mixing bowl combine all dry ingredients, set aside.

In a food processor or blender combine flax meal and water, processing for about 30 seconds. Add the oil, brown sugar and yogurt; process until well combined. Add the dates and bananas and process until fairly smooth. Add the wet ingredients to the dry mixing until just combined. Transfer batter to a prepared bread pan and bake for 40-50 minutes at 350 degrees.
