Here’s an easy peasy scone recipe packed with whole grains, nuts and dried fruit. These are so yummy warm out of the oven and are perfect for breakfast. We eat a lot of scones around my house but these were a particularly big hit so make them, ok?

Cherry Almond Scones

dry ingredients:

1/4 cup sugar

2 cups white whole wheat flour

1/3 cup very finely chopped almonds

1 Tbsp. baking powder

1/4 tsp. salt

1/2 cup dried cherries

wet ingredients:

2 Tbsp. flax meal

6 Tbsp. warm water

1/3 cup vegetable oil

1/3 cup + 2 Tbsp. non-dairy milk

1/4 tsp. almond extract

In a small bowl combine flax meal and water, whisking for about 15-30 seconds, set aside.

Combine dry ingredients in a medium mixing bowl, set aside.

Add the remaining wet ingredients to the flax mixture; oil, 1/3 cup non-dairy milk (don’t add the extra 2 Tbsp. unless your dough is too dry once you combine the wet and dry ingredients), and almond extract.

Add the wet to the dry mixing until just combined. Turn dough onto a lightly floured surface and form a flat circle, about 8 inches wide. You can sprinkle the dough with a cinnamon/sugar mixture or with a little raw sugar if you are so inclined at this point. Cut the dough into 8 triangular pieces and transfer them to a prepared baking sheet.

Bake for about 15-20 minutes at 400 degrees. Transfer to a rack and allow to completely cool.
