I hate to come off as a one trick pony here but I just love pancakes! Coupled with the fact that we have lots of berries leftover from picking a few weeks back, pancakes are just what’s for breakfast these days. To make a simple berry syrup just combine your berries (fresh or frozen) with about a half cup of maple syrup, let this simmer covered for a few minutes till the berries release their juices then simmer uncovered until the liquid equals about what you started with.

Banana Oat Pancakes

dry ingredients:

1 cup oat flour

1/2 cup cornmeal

1/2 tsp. baking soda

1/2 tsp. salt

1/2 tsp. cinnamon

1/4 tsp. nutmeg

wet ingredients:

1/4 cup ground flax seed

1/2 cup hot water

3 medium ripe bananas

3 Tbsp. coconut oil (or other oil)

1 Tbsp. lemon juice or apple cider vinegar

2 Tbsp. maple syrup

1/2 cup non-dairy milk

Combine dry ingredients in a medium mixing bowl and set aside.

Add flax meal and water to your blender or food processor and blend on high speed for at least 1 minute. Add the remaining wet ingredients and blend again until smooth. Add the wet mixture to the dry and mix until combined. Let the mixture sit a minute while you heat your griddle or skillet.

Pour batter onto a preheated and lightly oiled skillet or griddle, about a 1/4 of batter per pancake. They are ready to flip when edges appear dry and air bubble begin to form. Makes about 12 pancakes.
