We all love small things cause they’re just so darn cute; babies, kittens, smart cars – I just can’t get enough of them! This little cake is no exception, perfect for those days when you just want a little something special. For the cake I used the Lil’ Yellow Cake recipe from The 100 Best Vegan Baking Recipes, but if you are into complicated math problems go ahead and scale down any other cake recipe.

For the cake: Mix 5 teaspoons flour, 1 tablespoon sugar, 1/4 teaspoon baking powder, 1/4 teaspoon oil and 5 teaspoons milk in a small bowl. Divide the batter evenly between 2 muffin cups in a greased muffin pan. Bake at 375 degrees for between 13-15 minutes. When cool cut each cake in half.

For the frosting: Beat together 2 tablespoons vegan margarine (I use Earth Balance), 1/4 cup powdered sugar, 1/2 tablespoon soy (or any other non dairy) milk, 1 tablespoon cocoa powder and 1/4 teaspoon vanilla together until smooth.

When cakes are cooled frost your little tiny cake and decorate it any way you want, I just added some finely chopped walnut pieces. Enjoy!
